For Election Day 2012, I decided I would need some snacky foods to nervously eat while I watched the results come in…and because I’m super cheesy I wanted to make some red desserts to appropriately commemorate the occasion 🙂 Strawberry cake bars. Absolutely.
(Twizzlers – one of the only red candies I could find! haha)
1 box strawberry cake mix
1/2 cup water
1/2 cup greek yogurt
1/2 cup apple sauce
8 oz cream cheese
1/2 cup powdered sugar
Combine cake mix, water, yogurt, apple sauce and 1 egg into mixer. Blend well. The combo of greek yogurt and applesauce adds so much moisture without adding butter or oil!
Pour ~1/2 of the mixture into 9×13 pan.
In a separate bowl, mix cream cheese, powdered sugar and 1 egg.
Drizzle this mixture over the strawberry mixture.
Pour remaining strawberry mixture on top and swirl with a knife.
Bake at 350 for ~25-30 minutes or until toothpick comes out clean.
Let cool and cut into ~15 squares.
Yum. So fluffy and moist. I ate 4 while I watched the results come in 🙂 oops…
