Cooked strawberry and spinach chicken

My husband (and I…sorta) made this new recipe! 

The chicken is marinated in in balsamic vinegar, lemon juice in olive oil. It is seared on the stove for ~2-3 minutes over medium heat… and then baked for ~20 minutes at 350 degrees with chopped onion.



Strawberries are cooked down until they become soft and juicy. The spinach is added until it cooks down. It’s a very unique combination. Perfect for spring.



Chicken goes on top of the mixture. So simple. So yummy. So healthy.
