No stove to cook :(

This is what my kitchen counter currently looks like 😦 The gas in my apartment has been turned off for a month, which is one of the reasons I haven’t been blogging. They have been “fixing” the gas for awhile and require all of my ingredients to be out of my cabinet…

My dinner tonight…George Foreman grilled tilapia salad w/ fresh corn, cucumbers and carrots 🙂

I’m still alive!

It would appear that I’ve taken some sort of cooking/blogging hiatus. I haven’t posted anything in so long! It has been a busy few weeks. I moved, my husband graduated, I’ve had several visitors in town, I’ve been traveling. Anyways, I’m back 🙂 I plan to add some more recipes soon!! 

Introducing the wannabe chef!

Welcome to Rachel’s Recipe Diaries! This blog is about cooking, baking, and mostly eating. I am not a professionally trained chef, but I have a passion for food. One of my most favorite places to be is in the Kitchen creating something. I rarely follow a written recipe, but tend to create the food as I go. I think this will be a good place for me to document what I’ve made so it is re-creatable 🙂 I joke that once I have enough money I will quit my job and open a bakery. I have quite the sweet tooth, but also a desire to be healthy. You will find many dessert recipes that have been modified to include more healthy options but that retain the sweet taste we all love! You will also find healthy breakfast, dinner, and snack options!
